Kringle Estonien (brioche en torsade)

J'ai eu le coup de foudre pour cette jolie et délicieuse brioche vue sur le blog lapopotte de manue

Cette brioche n'est pas seulement jolie, elle est absoluement délicieuse et sa texture est parfaite.
Je l'ai fourrée de noix, cannelle et sucre brun, et son parfum embaume la maison pendant sa cuisson. Tout le monde l'a aimée chez moi et elle n'est plus qu'un doux souvenir.


Ingrédients:
* 300 gr de farine
* 12 cl de lait tiede
* 1cc de sucre en poudre (j'ai mis 1cs de sucre)
* 1 oeuf
* 30 gr de beurre mou
* 13 gr de levure fraiche
* 1 pincée de sel

Pour le fourrage:
* 30 gr de beurre fondu
* 30 gr de sucre brun
* 50 gr de noix concassées
* 11/2 cc de cannelle en poudre

Emiettez la levure dans le lait, ajoutez le sucre en poudre, mélangez et laissez mousser.
Dans la cuve de votre robot, ou dans un saladier, mettez la farine, le sel, l'oeuf, puis le levain. Pétrissez  quelques minutes, puis ajoutez le beurre en parcelles, continuez à pétrir jusqu'à ce que le beurre soit bien amalgamé et que la pâte se détache des bords de la cuve.

Transferrez le pâton dans un saladier, couvrez d'un film alimentaire et laissez reposer dans un endroit chaud jusqu'à ce que la pâte double de volume.

Sur un plan fariné, abaissez la pâte au rouleau, d'une épaisseur d'1/2 cm, faites un rectangle.
Mélangez les noix avec le sucre brun et la cannelle.
Badigeonnez la pâte de beurre fondu, puis parsemez du mélange aux noix sur toute la surface.

Roulez la pâte pour former un long rouleau. Coupez le rouleau en deux sur sa longueur.
Torsadez les deux brins avec le fourrage à l'extérieur, puis formez une couronne. que vous placerez sur une plaque garnie de papier cuisson.  Laissez doubler de volume.
Badigeonnez la avec le reste de beurre fondu et faites cuire au four pendant 15-20 minutes à 180C.

This brioche does not only look gorgeous, it tastes heavenly and its texture is perfect, when you cut it, you can see all the layers filled with nuts , brown sugar and cinnamon, and you know what, it isn't even too sweet, it is just right, fluffy inside and crunchy on the outside, on top of it, the delicious smell of warm cinnamon will fill your house as it bakes in the oven, a treat not to miss.


Ingredients
For the dough:
* 300 gr flour
* 12 cl lukewarm milk
* 1 tsp sugar ( 1 tbsp for me)
* 1 egg
* 30 gr soft butter
* 13 gr fresh baker's yeast
* a pinch of salt

For the filling:
* 30 gr melted butter
* 30 gr brown sugar
* 50 gr chopped walnuts
* 11/2 tsp cinnamon powder

For the dough, I use a kitchenaid robot, but It can be done manually.

Dissolve the yeast  and powdered sugar in the milk and place aside until it foams.
In the bowl, put the flour, salt, the egg, mix, add the yeast and milk mixture. Knead for a few minutes, add the butter in small pieces and knead until all the butter is well blended .Knead a bit more.
Cover and let rise in a warm place until the dough doubles its volume.
Punch down the dough, then transfer it to a floured surface, roll it into a large rectangle, 1/2cm thick.
Combine the brown sugar with the nuts and the cinnamon.
Brush the dough with the melted butter, then spread with the nut mixture on all its surface.
Form a long roll of dough, cut it length wise into 2 long strands. Braid the 2 strands with the filling on the outside, then shape the braid into a crown , joining the ends.
Transfer to a baking tin covered with parchment paper.  Let it raise for an hour.
Brush the kringle with the remaining melted butter.
Bake for 15-20 minutes in 180C. oven.

  6. J'ai réalisé cette brioche hier mais à la noisette et sort sur mon blog vendredi matin. Elle est excellente et je pense fortement la réaliser à nouveau.

  12. שלום, thank you for your response! Honestly, I prefer English because I started to learn hebrew only a year ago so I'm not that good at it yet. And though I really love French j'ai oublié beaucoup de mots :)
    You're right, the jewish cake is one of the yummiest ones I've ever tried! Maybe you could give me your recipe of that cake so I can try another version of it, if you don't mind. :)
